coconutty black eyed pea chicken

so my day started off with me making a chicken salad, a daal, and homemade naan but as the day progressed, I decided to simplify it to a one pot meal and make frozen paratha

I cooked it in my instant pot but I’m sure you can adjust the recipe for regular stovetop. I should add, it was a delicious concoction

  • 1 cup of black eyed peas (dried) and pressure cooked for 20 minutes in 1.5l of water
  • 1 large onion
  • 1 tbsp ginger and garlic paste
  • 1 small carton of passata
  • 1.5 tsp of salt
  • 1 tsp garam masala
  • 1 tsp mild madras curry powder
  • 1 tsp paprika
  • 1 tsp cumin (whole)
  • 750g chicken (breast)
  • 1 tin coconut milk
  • sprinkle of coriander
  1. Pressure cook the beans or drain a tin or two
  2. Saute the onion until brown, add ginger and garlic paste with the passata and a splash of water
  3. When the oil rises, and the spices with some water so they do not burn
  4. After a few minutes, add the chicken and pressure cook for 5 minutes
  5. Then add the beans and cook on a high heat for 10 minutes
  6. Add the coconut milk and coriander and simmer for 20 minutes on low
