so my day started off with me making a chicken salad, a daal, and homemade naan but as the day progressed, I decided to simplify it to a one pot meal and make frozen paratha
I cooked it in my instant pot but I’m sure you can adjust the recipe for regular stovetop. I should add, it was a delicious concoction
- 1 cup of black eyed peas (dried) and pressure cooked for 20 minutes in 1.5l of water
- 1 large onion
- 1 tbsp ginger and garlic paste
- 1 small carton of passata
- 1.5 tsp of salt
- 1 tsp garam masala
- 1 tsp mild madras curry powder
- 1 tsp paprika
- 1 tsp cumin (whole)
- 750g chicken (breast)
- 1 tin coconut milk
- sprinkle of coriander
- Pressure cook the beans or drain a tin or two
- Saute the onion until brown, add ginger and garlic paste with the passata and a splash of water
- When the oil rises, and the spices with some water so they do not burn
- After a few minutes, add the chicken and pressure cook for 5 minutes
- Then add the beans and cook on a high heat for 10 minutes
- Add the coconut milk and coriander and simmer for 20 minutes on low
