- 1 small onion
- 6 green chillis
- 1 bulb garlic
- 1 tbsp tomato puree
- 1/4 cup oil
- 1 lemon juiced
- 4 tbsp water
- 1 tbsp paprika
- 2 tbsp mixed herbs
- 1 tbsp sugar
- 2 tsp salt
- 1 tbsp vinegar
Blend and marinate chicken. Bake at 200 until cooked and slightly charred. Baste every 10 minutes.
Have with spicy rice:
- 2 cups rice
- 4 tbsp olive oil
- 1 large onion
- 1 tbsp garlic
- 2 peppers diced (mixed colours)
- 2 tbsp tomato puree
- 1 tsp coriander
- 1 tsp cumin
- 1/2 tsp turmeric
- 2 tsp salt
- 4 cups water
- Brown onion and peppers
- Add garlic, tomato puree, coriander, cumin, turmeric, salt and cook for 5 minutes
- Add rice, and water, and cook on high until 80% of the water has evaporated
- Cover and steam for 15 minutes
