Ruth’s Chocolate Cake

  • 175g self raising flour
  • 1 tsp baking powder
  • 30g cocoa powder
  • 175g butter
  • 175g caster sugar
  • 3 eggs
  • 1 tsp vanilla
  1. sift the dry ingredients together
  2. cream the butter, sugar, and vanilla until fluffy
  3. add the eggs to the butter mixture and mix well
  4. combine wet and dry ingredients
  5. bake at 170 for 30/40 minutes

Top with soured cream frosting:

Melt 150g chocolate in a bowl over simmering water, and mix well with 150g sour cream
