- 180ml oil
- 125g muscovado sugar
- 3 large eggs
- 1 tsp vanilla
- 225g carrots
- 100g walnuts
- 175g plain flour
- 1 1/2 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tsp cinnamon
- Preheat oven to 170 degrees
- Beat oil, sugar & eggs
- Add vanilla, walnuts and carrots
- Sift & fold in dry ingredients
- Bake for 45 minutes
Frosting:
Beat 180g cream cheese & 50g icing sugar
