The Ultimate Carrot Cake

  • 180ml oil
  • 125g muscovado sugar
  • 3 large eggs
  • 1 tsp vanilla
  • 225g carrots
  • 100g walnuts
  • 175g plain flour
  • 1 1/2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp cinnamon
  1. Preheat oven to 170 degrees
  2. Beat oil, sugar & eggs
  3. Add vanilla, walnuts and carrots
  4. Sift & fold in dry ingredients
  5. Bake for 45 minutes

Frosting:

Beat 180g cream cheese & 50g icing sugar
