GF cookies (also Keto)

Makes 8 cookies

Ingredients:

  • 115g butter softened
  • 4 tbsp of granulated sugar (sweetener if keto)
  • 65g coconut flour
  • 1/2 tsp baking powder
  • 2 eggs
  • 2 tbsp cacao nibs
  • 2 tbsp dark choc chips
  • 2 tsp vanilla extract
  • 2 tbsp cream (heavy, double or whipping)
  1. Preheat the oven to 160 degrees
  2. Cream the butter, vanilla and sugar (sweetener)
  3. Add the coconut flour, baking powder, eggs and cream and whisk. Electric whisk is ideal
  4. Add the cacao nibs and chocolate chips and mix with a spoon/spatula
  5. Take a tbsp of the mixture, and shape into balls on parchment lined sheet pan. Alternatively, roll out between parchment paper to get a log and cut into 1 inch slices
  6. Bake for 10 minutes. Leave to cool and harden before eating
