Makes 8 cookies
Ingredients:
- 115g butter softened
- 4 tbsp of granulated sugar (sweetener if keto)
- 65g coconut flour
- 1/2 tsp baking powder
- 2 eggs
- 2 tbsp cacao nibs
- 2 tbsp dark choc chips
- 2 tsp vanilla extract
- 2 tbsp cream (heavy, double or whipping)
- Preheat the oven to 160 degrees
- Cream the butter, vanilla and sugar (sweetener)
- Add the coconut flour, baking powder, eggs and cream and whisk. Electric whisk is ideal
- Add the cacao nibs and chocolate chips and mix with a spoon/spatula
- Take a tbsp of the mixture, and shape into balls on parchment lined sheet pan. Alternatively, roll out between parchment paper to get a log and cut into 1 inch slices
- Bake for 10 minutes. Leave to cool and harden before eating
