IP chicken and cauliflower curry

Perrrrrf for a keto meal. I served with cabbage noodles, sautéed in butter with salt and pepper.

Ingredients:

  • 2 tbsp coconut oil
  • 2 tbsp butter
  • 1 onion
  • 5 cloves of garlic
  • 1 chunk of garlic
  • 1 tin of tomatoes (crushed)
  • 1 tsp of whole cumin
  • 1 tsp of whole coriander
  • 1 tsp curry powder
  • 1 tsp salt
  • 1 tsp paprika
  • 500g chicken
  • 1 head of cauliflower
  • coriander
  1. Brown of onion in oil with salt and whole cumin and whole coriander
  2. Add garlic and ginger and cook for 1 minute
  3. Add crushed tomatoes and spices
  4. When oil has separated, add chicken and cauliflower, and 350 ml of hot water
  5. Pressure cook for 5 minutes with instant release
  6. Lid off, sauté on low for 20 minutes and add coriander near the end
