Perrrrrf for a keto meal. I served with cabbage noodles, sautéed in butter with salt and pepper.
Ingredients:
- 2 tbsp coconut oil
- 2 tbsp butter
- 1 onion
- 5 cloves of garlic
- 1 chunk of garlic
- 1 tin of tomatoes (crushed)
- 1 tsp of whole cumin
- 1 tsp of whole coriander
- 1 tsp curry powder
- 1 tsp salt
- 1 tsp paprika
- 500g chicken
- 1 head of cauliflower
- coriander
- Brown of onion in oil with salt and whole cumin and whole coriander
- Add garlic and ginger and cook for 1 minute
- Add crushed tomatoes and spices
- When oil has separated, add chicken and cauliflower, and 350 ml of hot water
- Pressure cook for 5 minutes with instant release
- Lid off, sauté on low for 20 minutes and add coriander near the end
