- 28g coconut flour
- 3 eggs
- 2 tbsp butter or coconut oil
- 6 tbsp milk (84ml)
- 1 tsp baking powder
- 1 tsp vanilla paste
- 1 tbsp sweetener (honey or sugar will do unless keto)
- 2 tbsp whipping cream
- Heat some butter in a frying pan, but keep it on a low heat otherwise the pancakes will burn
- Whisk the eggs until frothy
- Add the remainder of the ingredients and whisk with an electric whisk
- Let the mixture sit for about 5 minutes to thicken
- Use 2 tbsp of mix per pancake – they will take about 5 minutes on the first side, and another 2/3 minutes on the other side
