gf coconut flour pancakes

  • 28g coconut flour
  • 3 eggs
  • 2 tbsp butter or coconut oil
  • 6 tbsp milk (84ml)
  • 1 tsp baking powder
  • 1 tsp vanilla paste
  • 1 tbsp sweetener (honey or sugar will do unless keto)
  • 2 tbsp whipping cream
  1. Heat some butter in a frying pan, but keep it on a low heat otherwise the pancakes will burn
  2. Whisk the eggs until frothy
  3. Add the remainder of the ingredients and whisk with an electric whisk
  4. Let the mixture sit for about 5 minutes to thicken
  5. Use 2 tbsp of mix per pancake – they will take about 5 minutes on the first side, and another 2/3 minutes on the other side

    Great with berries
