Lemon tuna pasta

  • An onion
  • 1 tsp garlic
  • Half a punnet of mushrooms
  • 1 pack of baby corn
  • 1 pack of tenderstem broccoli
  • 1 tsp paprika
  • Juice of 1 lemon
  • 1 veg stock cube
  • 2 tbsp tomato purée
  • 2 tins of tuna
  • 500g pasta
  • 1L water (boiling)

Brown onion, add garlic and mushrooms

Add baby corn and broccoli after 5 minutes

Add paprika, tomato purée, lemon juice, tuna, stock cube, and a good splash of water and cook for 5 mins

Add pasta and water, lid on for 15 mins, medium high. Stir every 5 minutes.

Cover with cheese and put in an oven, preheated to 200, for 10 minutes
