chicken corn soup

Prep 10 mins. 

1 chicken breast chopped in small pieces 

2 chicken or veg stock cubes 

2 spring onions 

2 carrots 

Pack of baby corn 

3-4 finger chillis

2 tsp Corn flour 

Soy sauce 

Noodles (optional) 

1, Boil water in deep pot, add 2 chicken or veg stock cubes. Once boiled, add chicken breast  

2, Coarsely blend 1 can of sweetcorn and boil for 10 mins

3, Make corn flour slurry. 2 tsp corn flour to 4 tsp water. Adjust to desired thickness and add to pot

4, Add 2 carrots and baby corn chopped 

5, Add salt and black pepper to taste

6, Add baby noodles (optional) 

Make condiment 

Add chopped green chillies to white vinegar 

Serve with soy sauce, green chilli and spring onion. Enjoy 😊
