Zayan’s Broccoli and Feta Frittata

(inspired by KES Wednesday lunches)

Butter 

Onion

200g broccoli 

Eggs 

Cheese

Cream 

Olives

Feta 

Brown a small onion in butter, (add sweet roasted garlic purée if you wish)

Wash and chop broccoli, steam in microwave or pan and keep aside.

Whisk eggs, add seasoning; oregano, smoked paprika, salt and pepper (can add some cream)

Add browned onions, drained broccoli and stir in cheese and mix 

Add mixture to pan until edges are set and top with feta and olives then bake in oven at 180c for 15 mins or until puffed and set.
